Chicken Dum Biriyani

Thalassery chicken biriyani is popular among food lovers in Kerala. Thalassery is a small town of Kannur district, the place is famous for a variety of foods especially biriyani. The unique taste and preparation style made this Thalassery biryani stand out from all other biriyani recipes.

Ingredients to Make Thalassery Biriyani:

To make masala:
  • Chicken: 500gm
  • Onion: 2 medium size
  • Tomato: 1 medium
  • Ginger: 1 medium
  • Garlic: 10
  • Green Chilli: 4
  • Ghee: 2 tbsp
  • Coconut oil: 1 tbsp
  • Curd: 2 tbsp
  • Pepper: 1/4 tsp
  • Turmeric Powder: 1/4tsp
  • Garam Masala: 2 tsp
  • Lemon:1/2
  • Mint Leaves
  • Coriander Leaves
To garnish:
  • Onion: 1 medium size
  • Ghee: 2 tbsp
  • Coconut oil: 2 tbsp
  • Cashew nuts: 10
  • Raisin: 10
  • Mint Leaves
  • Coriander Leaves
To make ghee rice
  • Rice(jeerakashala) : 2 cups (180ml cup)
  • Bay leaves: 1
  • Cloves: 5
  • Cinnamon 1 small
  • Star anise: 1
  • Lemon: 1
  • Salt: to taste
  • Mint Leaves
  • Coriander Leaves

Preparation:

To prepare Rice:

Step 1: Clean the rice then, soak for 10 to 20 min.

Step 2: Put this soaked rice in a rice cooker then, Pour enough water

( I have taken 2 cups(180ml cup) of rice and added 3 cups of water).

Step 3: Add 2 tbsp of ghee & spices as per below,

  • Bay leaves: 1
  • Cloves: 5
  • Cinnamon: 1 small
  • Star anise: 1

Step 4:  Add one tablespoon of lemon juice, that will keep rice from sticking together. Switch off the cooker when the rice is almost 90% cooked, remaining will be cooked during the time of dum.

To Prepare Masala

Step 1: Chicken should be marinated at least half an hour before starts preparing the masala. add a pinch of chilli powder, turmeric powder, 1 tsp ginger garlic paste and 2 tbsp Curd. Mix well with hand and keep aside.

Step 2: Add 2 tbsp Ghee and 2 tbsp coconut oil in a frying pan. When the oil becomes hot add one finely chopped onion and salt, sauté in a high flame till it becomes golden brown. As soon as the colour of onions become golden brown keep the flame in medium and sauté. Take out this fried onion once it becomes evenly brown in colour.

Step 3: Add raisins and cashews in the remaining oil in the pan, fry those until golden and raisins become puffed. Once it has done take out from the pan and keep aside.

Step 4: Add some more coconut oil(1 tbsp) in the same pan and add remaining 2 finely chopped onions, some salt and sauté well on medium heat, Once the onions become golden brown add ginger garlic and green chilli paste. Saute until this ginger and garlic no longer have their raw smell.

Step 5: Add marinated chicken pieces and mix those well. Cover the pan and cook for 10 to 15 minutes in a medium flame stir it occasionally. Once the chicken cooks well, add finely chopped mint leaves and coriander leaves and mix well. Cook in a medium flame until the water contents evaporate and get a thick masala. Once done keep the flame as low as possible to make a dum.

To make a dum

Step 1: Add  90% cooked rice on top of the prepared chicken masala then add some fried onions, cashews and raisins, add finely chopped mint leaves and coriander leaves too. Add another layer of rice and add fried onions cashews raisins and finely chopped mint leaves and coriander leaves.

Step 2:Mix a pinch of turmeric powder in a tablespoon of milk and spread on top of the rice layer to get a yellow colour.

Step 3: Finally, Cover the pan using an aluminium foil and place the lid of the pan on top of that. Keep this for 10 to 11 minutes. Hence yummy Thalassery dum chicken biriyani will be ready within 11 minutes.

  • To get a yellow colour to add a pinch of turmeric powder in a tablespoon of milk and spread on top of the rice layer.
  • Cover the pan using an aluminium foil and place the lid of the pan on top of that. Keep this for 10 to 11 minutes. Yummy Thalassery dum chicken biriyani will be ready within 11 minutes.
